Commercial ghee is boiled rapidly at 150°C using metal steam jackets which destroys natural beta-carotene and essential vitamins.

We slow-heat our white butter over low earthen fire at gentle temperatures below 95°C. This allows water moisture to evaporate quietly while milk proteins settle naturally into golden granular granules.
